#MeatlessMonday Recipe: Don’t Worry, Eat Happy Superfood Salad


I’m always on the go, as are many of you, and I need food that is quick, but that also gives me energy. My go-to choice for a nutrient-rich lunch or dinner is my very own Don’t Worry, Eat Happy Superfood Salad.

A great #MeatlessMonday recipe, what is the mixture of a Superfood Salad? A salad rich in nutrients, minerals and vitamins. Contrary to popular belief, you need not head to a natural food store or gourmet market to find Superfoods. They’re available in most supermarkets. Prep is the key to success with your Superfood Salad. Buy the right ingredients, chop up greens ahead of time and store in fridge. With a few colorful add-ins it transforms into an #EatTheRainbow recipe, too! You’ll have a delicious, fulfilling meal in minutes flat.

Don't Worry, Eat Happy Superfood Salad


  • 2 cups kale, spinach, Rainbow Swiss chard or radicchio
  • 2 cups Napa cabbage
  • 2 cups Brussels sprouts, shredded
  • Add-ons:
  • 6 radishes, thinly sliced
  • 1 red onion, thinly sliced
  • 3 Tbs seeds or nuts of choice (I like toasted sunflower seeds)
  • I small container Grape tomatoes, halved
  • 1 cup fresh blueberries, rinsed and patted dry


  1. Chop up Superfood greens such as kale, Napa cabbage, and Brussels sprouts.
  2. Gently toss greens together in a large bowl.
  3. Place the greens in a “date made” labeled Ziploc bags. Squeeze out excess air then seal.
  4. When ready to serve, add-on remaining ingredients. Use simple lemon vinaigrette.
